Herbed parmesan-crusted butterfly lobster
Let’s get ready for summer with this buttery, cheesy and herbed lobster recipe!

Cook time: 10 minutes
Ingredients:
2 lobster tails
3 tbsp melted butter
1 tbsp fresh parsley
salt/pepper to taste
1/2 small lemon
Shredded aged parmigiano reggiano (optional)
1 tbsp ground walnut (optional)
Recipe:
Set the oven to broil on high.
Butterfly the lobster tail (look online on how to do so). In a bowl mix the butter, lemon, and ground walnut to form a marinade.
Rub on the mixture with a brush or your fingers, sprinkle fresh parsley, cheese and salt on top (I add a lot of cheese! hehe). Broil on high for 10 minutes. Finish off with some fresh parsley and a good squeeze of lemon
Serve with a side salad. I made mine with arugula, spinach, walnut, blueberries, beets, avocado and dressed with olive oil and parsley.
The earthy tones of the salad go very well with the rich lobster tail.
