Parmesan-crusted zucchini
Here’s one for the vegetarians! I haven’t forgotten about you. 😘
Rich, savory, AND healthy? What? A simple recipe that works great as a side dish or a light meal. You can simply throw it into the oven and get to making other nom noms.

Ingredients:
1 large zucchini quartered longitudinally.
1/2 cup fine parmesan
1/2 tbsp dried oregano
1 tbsp finely minced fresh parsley
1/2 tbsp dried basil
chili powder
salt & pepper
olive oil

I’m sure you’re tired of hearing that this recipe is so simple. But it really is! haha
Mix all the dry ingredients on a plate and set them aside. Pat dry the zucchini and brush it with olive oil or simply rub oil over it with your fingers. On a baking sheet or tray, line the bottom with aluminium foil (The shiny side facing up. Apparently that makes a difference, it was a recent discovery so don’t ask me how that works!). It just makes cleaning the tray easier, that’s the only reason why I use it. Haha
Anyways, take your oiled zucchini and dip and press it in the dry ingredients. Get it coated real good. And place it skin down on the tray. Bake at 375F for 30 mins. Then broil on high for 3-4 mins max, and your zucchi zucchi par par is ready. Extra brownie points if you get that reference, in my case a brownie recipe in the future?
Your parmesan-crusted zucchini pairs really well with Italian food and soup! I sometimes eat this simply as a light lunch.
